One way to host a tournament with a large number of signups is to have the first few tiers of matches carried out as invitationals or preliminaries that not everyone has to watch. Then only have the last 10-20 remaining show up for matches the day of. Breaks up the time into manageable sections.
You might even fluff them as regionals, having each city do its own tournament to find the 5 best people or whatever.

The grand tournament's is a thing and something that's been run a number of times, and as for raids the OOC element really isn't a great fit (especially when the server has 100+ people online). I do absolutely want to see more PvE options in the long-term, but in the short-term we have higher feature priorities.
